Courgette Loaf

 

Clear up the glut with this delicious loaf

COURGETTE LOAF

3 eggs beaten

9 fl oz sunflower oil

12 oz caster sugar

12 oz grated courgette

5.5 oz plain flour

5.5 oz self raising whole meal flour

1 tsp baking powder

1 tsp bicarbonate of soda

1 tbps ground cinnamon

6 oz raisins

5 oz chopped walnuts

 

  1. Preheat oven to 180 C,  350 F,  Gas Mark 4
  2. Grease & line two 2lb loaf tins
  3. Mix all the ingredients together to make a thick batter.
  4. Divide between the tins & bake for 1 hour.

 

This will keep in the fridge for 3 weeks or can be frozen
